I'm a dad, a husband, a teacher, a live fire chef, a fermenter, a brewer and a baker. Always happiest when cooking with fire!

 

I love showing people how cooking on wood and charcoal can enhance food and showing them many different techniques. I think I should be selected because I love what I do, I love cooking with fire and I think I'm a little bit different to your everyday fire cook. And it will be great craic!

My Dish

My dish is a smoked honey porter & black garlic dark chocolate fondant, served warm for a decadent liquid centre. Accompanied by charcoal infused black garlic & caramelised honey ice cream, a beautiful balance of smoky sweetness with a touch of savouriness.

A smoked water milk chocolate ganache, to add a little lightness, hay smoked raspberries, and finished with barbecued honeycomb.
