Cameron Letch
I've been cooking over live fire while camping or on the BBQ on and off for over 20 years. Most recently I have decided to run a small food blog called cams house, I post what I cook for family and friends and the occasional pop up event.
My style of cookery is anything I fancy the look and taste of with a heavy Oriental influence. Living on a small holding and growing fruit and vegetables, and sourcing locally grown meat I aim to use the freshest of ingredients.
Most recently I've been pushing what I can achieve on the grill and building a BBQ shelter towards hopefully cooking over live fire full time.
My Dish
Cooked over a mix of charcoal and cherry wood I have cooked a Oriental influenced banquet. Nem Lụi Huế Vietnamese pork and lemongrass skewers served with a Thai nam jim dipping sauce. Gai yang, Thai BBQ chicken. A popular street food with a fragrant sweet, spicy and sticky marinade and sauce. King prawn Thai green curry. A mild in spice but fragrant curry. Grilled sesame pak choi, Thai cucumber salad and sticky rice.
