Clive Hall

I'm originally from South Africa but have been living in UK (Hampshire) for 24 yrs now. My day job is gardening and growing fruit & vegetables but I have a deep love and passion for cooking with wood fire in the outdoors.

 

I'm sure you know, fire cooking is almost like religion in S.A . Cooking over, in or under wood fire started at a very young age for me. Gathering wood from the bush with my father was always done with great excitement as was cooking up meals with fresh produce from our veg garden, foraging and fishing.

 

I'm longing for a culinary fire adventure. So when I heard about this competition I was so stoked and am excited to enter!!! I cook quite a lot of my meals year round for my family & friends in my self built (out of recycled stuff) outdoor kitchen or on the seashore while fishing.

 

I would be both humbled and honoured to be selected and would bring my roots culture into the meals I'd be preparing and cooking. I give thanks for your time reading this and hope you like my Live Fire Cooked Meal.

My Dish

My Live fire cooked dish is : Starter of Stuffed Courgette Flowers with soft cheese,garlic on chive prawn mousse deep fried, served with peri peri dipping sauce. Main is a 1 TURF, Grilled T-bone steak with garlic butter & 2 SURF deep fried buttermilk spice calamari rings on lemon garlic butter grilled prawns with homemade tartare sauce served with red cabbage slaw on deep fried butternut dirty fries with mozzarella, bacon and spring onions finished off in wood fired oven. Desert is slowly, red wine poached pear with staranise, ground cloves with fresh mint and sauce reduction.
