Mungo Finlayson

I have always been a bit of a foodie however it wasn't until I got my Kadai in 2021 that I really got into fire cooking. There is far more to it than I thought, from charcoal to smoking.

 

It's became a real passion of mine and I love experimenting with different recipes and techniques. Entering this competition has inspired me (even more than usual) to go outside my comfort zone by adding a twist to recipes I know I love and I feel I am good at.

My Dish

My dish is a BBQ version of a classic Sunday roast in our house. Starting with a G+T garnished with a caramelised orange slice and dried thyme. For the main event a boned and rolled lamb saddle stuffed with spinach and garlic, with sides of honey roasted vegetables, roasted new potatoes and a must in our family, onion sauce! For dessert, cherry smoked barbeque chocolate brownies with Mackie's vanilla ice cream.
